Restaurant Manager – Point Loma

Charles + Dinorah, a poolside restaurant within The Pearl Hotel in Point Loma, is looking to hire an amazing Restaurant Manager to join the team!
Charles + Dinorah is our ode to the original owners of the property who embarked on their journey to create the Sportsman’s Lodge in the 1960s. Decades and a hotel name change later, we’re paying homage to the property’s past through their namesake restaurant. Charles + Dinorah brings an adventurous, yet approachable dining destination to both hotel guests and locals alike.Top candidates will possess the following qualifications:

Responsibilities

Restaurant Operations
Forecast sales versus labor. Maximize profitability through scheduling.
Partner with Executive Chef to meet/exceed budgets.
Minimize legal liability and conform to Dept. of ABC regulations.
Minimize legal liability and conform to federal and state labor laws
Ensure human resources and workers comp compliance
Ordering restaurant/restroom supplies. Check deliveries. Review, monitor and code all invoices.
Execute onsite and offsite events alongside Sales Manager.
Maintain ambiance/environment in accordance to comfort standards
Handle tasks and duties, given by Property General Manager, in a timely manner
Sustain relationships with vendors.

Customer Retention and Recovery
Handle customer recovery situations per the C+D and Pearl standard
Escalate major issues to Property General Manager

Staff training and supervision
Screen, hire, train, and coach restaurant team alongside Executive Chef
Ensure up to date training for staff (Employee Handbook, Training Manual)
Implement training for new hires (Training schedule, quizzes, shadows, etc)
Create and implement continuous training for staff including staff field trips, on-site staff education
Create and implement staff mini games to increase sales, get rid of inventory and upsell.

General Floor Shift Duties
Opening and closing duties of the restaurant
Floor duties (Discounts, expo, table touches, etc.)
Respond and coordinate large party reservations
Revolving table touches

Create and Implement Independent Projects
Operation Checklists
Upselling
Guest Experience Training
Inventory Process

Baseline Sales & Marketing
Track and analyze ongoing promotions. Create a weekly report sent to the Operations Manager
Research and create promotions for the restaurant to boost baseline sales
Create bi-monthly dinners with the Sales Coordinator for low performing days
Maintain industry network and invite 4 people in a week to dine (Brunch, Dinner, HH, Dive-In), with follow-up program

Assist Sales and Event Coordinator with large party (14-20) dinners
Assist General Manager with marketing items including, but not limited to social media posts, newsletter content, restaurant collateral upkeep, listings, press releases.

Skills & Requirements
Practical bar and serving experience in fine dining and bar management at a competitive establishment.
Food, wine, cocktail, beer knowledge and must be able to train others in their working knowledge.
Must be comfortable with payroll management, cash counting, credit card batching, P&Ls, Excel, Word, email, and web applications
Banquet, catering, and wedding experience a plus
